Burnt Orange Old Fashioned

Make your next Old Fashioned a little extra special with some burnt sugar syrup, a flamed orange peel, and a couple bourbon-soaked cherries.  The caramelized sugar adds a lovely richness, while the burnt orange peel adds a nice smokiness.


Burnt Orange Old Fashioned
makes 1 drink

2 oz whiskey
1 bar spoon or teaspoon burnt sugar syrup (recipe below)
3 dashes bitters, The Bitter Truth Jerry Thomas' Own Decanter bitters or Angostura bitters
Dash of club soda, optional
Orange peel
2 bourbon-soaked or maraschino cherries, for garnish

Combine the whiskey, burnt sugar syrup, and bitters in a mixing glass with ice and stir. Strain into a rocks glass with a large ice cube and add a dash of club soda, if using. Holding the orange peel lengthwise with the outer skin facing down, gently bend it in half (longways) over the glass to express the oils and then rub it around the rim of the glass. Light a match and lightly burn the orange peel before dropping it into the glass. Alternatively, you could up the wow factor and impress all of your friends by flaming your orange peel like this. Garnish with cherries and serve.


Burnt Sugar Syrup

1 cup granulated sugar
1 cup water

Over medium-low heat, melt sugar in a saucepan, stirring occasionally.  Once the sugar is completely melted, it should be a deep amber color.  Remove from heat and slowly add the water, stirring or whisking constantly.  Let cool completely before using.
